The best rooms were never on the floor — upstairs, downstairs, behind the kitchen, the ones you had to be walked to. Keys to rooms that appear on no list. The people are of the restaurants — chefs, sommeliers, the ones who remember a table and a bottle. Nothing packaged, nothing to sign. An occasion, named; a room, made ready. A drink in a secluded booth within the hour, or a full production in a month — chef, cellar, staff, sound, doors. One call, and the house carries the evening.

The concierge arranges the mountains, the rails, the desert, the islands — or somewhere no list reaches. The houses pay the commission; nothing is added to the rate.

Membership stays small in every city — so the rooms remain easy to hold, and the house still knows the name. New members arrive by invitation, most often from someone already at the table.
